this is a mild, white fish, also called European bass. You need three whole branzino fish for this recipe. Also, grab extra virgin olive oil, lemon, butter, onion, garlic, salt and pepper, lemon juice, and parsley or chives.

Begin by preparing the sauce. In a saucepan, melt the butter. Then add onion and saute.

Next, add garlic until cooked. Remove the pan from the heat. Add your herbs and cover the pan to keep it warm.

Now, prep your fish. Remove excess moisture with a paper towel. Take a sharp knife, and on both sides, make deep slits.

Place the prepared branzino on a large baking sheet season and stuff the fish with lemon slices. Brush the outside with olive oil. Season the fish with salt and pepper to taste.
